Abstract

Pendahuluan: Antosianin merupakan keluarga besar polifenol yang menunjukkan pigmen  pada berbagai jenis  buah-buahan dan tanaman di alam. Pigmen yang ditunjukkan yaitu merah, merah jambu, biru dan ungu. Antosianin bertanggung jawab terhadap adanya warna biru dari bunga telang. Berbagai manfaat yang dimiliki antosianin bagi kesehatan diantaranya sebagai proteksi DNA, antiinflamasi, anti kanker, antioksidan, antidiabetes, mencegah penyakit kardiovaskular dan penyakit neurodegeneratif.

Tujuan: Penelitian ini bertujuan untuk menentukan kadar antosianin pada ekstrak etanol bunga telang.

Metode: Penentuan kadar antosianin pada ekstrak etanol  bunga telang dilakukan dengan metode differensial pH dengan menggunakan spektrofotometri uv-vis pada panjang gelombang 510 nm dan 700 nm.

Hasil: Kadar antosianin pada ekstrak etanol bunga telang yang dilakukan pada penelitian ini dengan metode differensial pH diperoleh sebesar 0,853%.

Kesimpulan: Dari hasil penelitian dapat disimpulkan bahwa kadar antosianin bunga telang dari hasil ekstraksi maserasi dengan  pelarut etanol 70% cukup tinggi dan berpotensi sebagai salah satu sumber obat bahan alam dan sebagai pewarna alami.
